Instructions

Preheat the oven to 200 degrees.

Peel the pumpkin and cut it into cubes of 1/2cm. Place the cubes in a bowl, add 1 tablespoon of olive oil and season to taste. Bake the pumpkin on parchment paper for 12-15 minutes in the oven until tender. Turn the pumpkin around halfway the time. In the same oven dish, you can toast the sunflower seeds for 3 minutes. Set both aside.

Rinse the rice under cold water. Drain the water and place the rice in a medium-size pot together with 500ml of water. Bring the water to a boil and let it cook for 15-20 minutes. Try the rice before draining the water. Drain the water and spread the rice on a plate to form a thin layer. This way it will cool down quicker.

Peel and finely chop the onion. Heat 1/2 tablespoon of olive oil over high heat and sauté the onion. When it starts to brown, lower the heat and continue cooking for 5 minutes until it's completely toasted. Remove from the heat and place it into a mixing jar. Add the soy cream and 5 tablespoons of cold water. Blend it with a hand blender to a smooth sauce. Season to taste.

Wash and peel half of the pear and cut it into thin slices. Wash the mix of green leaves and cut it with your hands. Wash and chop the basil, and mix it with the lettuce. Drain and wash the beans.
