Quinoa and brown rice tabbouleh
made with a variety of vegetables and a aguachile cucumber dressing

Instructions

Wash the basmati rice and cook it in a pot with plenty of boiling water for approx. 20 minutes. Drain the water and let the rice cool down.

Wash the quinoa in a bowl with plenty of water, while rubbing it between your hands. Renew the water and repeat this process two more times. Drain the water and cook the quinoa in a pot with triple the amount of water compared to the quinoa. Bring the water to a boil and let it simmer for approx. 10 minutes. Drain the water and let the quinoa cool down.

Wash all the vegetables. Cut the tomatoes in quarters lengthwise and remove the pulp (reserve the pulp for the aguachile). Cut the tomatoes into small cubes. Finely chop the red onion and red pepper. Cut the scallion in thin diagonal slices. Wash the corn. Remove the seeds from 1/4 of the cucumber and save for the aguachile. Cut the seedless cucumber in small cubes. Mix all ingredients and set aside.

For the aguachile: place the mint and parsley leaves, the juice of the lemon, 1 tablespoon of olive oil, 1/4 of a chopped cucumber plus the saved seeds and the tomato pulp in a mixing jar. Blend everything with a hand blender to a smooth green-ish liquid. Sieve the liquid to remove any solids. Season to taste and add more lemon juice if necessary. It should be a bit sour.
